Estou fazendo um app de tarefas a fazer(To do list), eu gostaria de saber como ocultar um elemento após 5 segundos depois de ter selecionado o item atravéz do meu checkbox.

Tenho a seguinte estrutura HTML:

Você pode utilizar o service $timeout em conjunto com o ng-class para definir uma classe após 5000 milisegundos (5 segundos) que irá fazer o item sumir atribuindo a classe escondido no exemplo a seguir:
